Hanging Tenderloin Steak

Nowadays, of course, horse thieves simply go to prison. But at least we can still enjoy hanging tenderloin! Otherwise known as hanger steak (and misspelled as hangar steak), our Glatt Kosher Premium Angus hanging tenderloin is richly grained and bursting with flavor. Called “fajitas” (“little belts”) south of the border, these belt-shaped steaks of fine Glatt Kosher Premium Angus Beef are among the most flavorful of all steaks. They’re particularly mouth watering when marinated (balsamic vinegar’s a favorite) or dry rubbed with spices (try ancho chile or allspice or garlic and/or oregano, wrapped in plastic overnight) because their loose texture and rich taste allow the steaks to fully absorb and complement bold flavors. Golden West Glatt 21-Day Dry Aged Rib Steaks

Back in our grandfathers’ day, butchers discovered that top quality beef, left hanging and shrouded in a cooler for weeks at a time, ended up substantially more tender and flavorful—a process known today as dry aging. A combination of time, temperature, air circulation, and humidity, dry aging is a costly process that, in the considered opinion of those who take their steak seriously, is well worth it. Dry aging works two ways. First, moisture evaporation shrinks the meat as much as 15%, creating a greater concentration of beefy flavor and taste. Second, the beef's natural enzymes break down the proteins and connective tissue in the meat, creating a whole other order of melt-in-your-mouth tenderness. Well worth it, indeed.
